Smashed Potatoes Were a SMASH on Pinterest

 

My career was short lived on Pinterest.

The possible future copyright violations there freaked me out a bit. I am prickly (to say the least) when it comes to trademark, patent and intellectual property issues. I may go into it someday on my web success blog.

While on Pinterest for those few short weeks, I did manage to pin another person's pin of a Smashed Potato recipe that went a little viral.

Moms and Dads went nuts for this stylish potato recipe!

It's so simple to make I have been smashing my own potatoes ever since.

Smashed potatoes are almost better than french fries and are a truly elegant way to enjoy the spud!

Smashed Potatoes

Boil some small potatoes, any type will do.

When soft, remove from the fire and drain the potatoes well.

Put drained potatoes on a cookie sheet or in a shallow dish. 

Use the back of a spoon and SMASH each potato making sure it is flat.

Sprinkle with a generous dose of extra virgin olive oil.

Sprinkle with salt, pepper, garlic powder, cayenne (if you like spicy) or any other seasonings you like.

Turn the smashed potatoes gently in the oil making sure they are all coated in the spices and bake at 375 degrees until crispy like you see below.
